INGREDIENTS
- 3 tablespoons all-purpose flour for dusting baking pan
- 1 cup coconut milk, melted (more for greasing baking pan)
- 4 large eggs, whipped
- 1 cup whole wheat flour
- 1 cup bread flour
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup maple syrup
- 1/2 cup date paste
- 1/3 cup plain yogurt
- 2 teaspoons pure vanilla extract
- 3 cups shredded zucchini
- 1 cup semi sweet chocolate chips (optional)
DIRECTIONS
- Preheat oven to 350F.
- Grease a 9-inch round cake pan with coconut oil the dust with all purpose flour.
- Whip the eggs. While the eggs whip, whisk the flours, cocoa powder, baking soda, baking powder and salt together.
- Add the coconut oil, maple syrup, date paste, yogurt, vanilla extract and zucchini to the dry ingredients. Once combined, fold in the fluffed eggs and chocolate chips. Batter will be thicker than other cake batters.
- Pour evenly into cake pan and bake for 25-30 minutes.
- Let cool then eat and enjoy!
