INGREDIENTS
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking powder
- 1 cup sweet potato puree
- 3 tablespoons spices of choice (such as cinnamon or garlic, onion powder, smoked paprika, cumin, oregano, etc.)
- 1/4 cup grated cheese of choice
DIRECTIONS
- In a mixing bowl, combine all the ingredients. First combine with a spoon then mix everything together by hand and knead until a dough forms. If the dough feels too sticky, you can add flour, 1 tablespoon at a time. Cover and refrigerate for at least an hour.
- Preheat oven to 350F. Divide the dough into 2. Place the dough onto a floured surface and roll it out to about 1/8 inch thickness. You can adjust the thickness depending on how crispy you want your crackers to be.
- Use a sharp knife, pizza cutter, or fluted pastry wheel cut the dough into desired cracker shapes.
- Transfer the crackers onto a lined cookie sheet, leaving a little bit of space between each cracker.
- Bake the crackers for 15-20 minutes. flip and bake for an additional 10-15 minutes. Keep an eye on them towards the end to keep them from burning, you want the edges golden brown.
- Let cool completely before eating.
NOTES
- Don’t over work the dough.
- Serve with hummus!
