TJ's Zucchini Pancakes

Ingredients

  • 1 cup bread flour
  • 3/4 cup oat flour
  • 1/3 cup groud flax seed
  • 3/4 cup oats
  • 1 1/2 teaspoon baking powder
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon powder
  • 1 egg (no flax if egg is large)
  • 2 tablespoons melted butter, plus more for cooking
  • Dash of salt
  • 3 tablespoons maple syrup or to taste
  • 1 small zucchini, grated
  • 1 cup whole milk
  • 1 cup apple sauce

Directions

  1. Mix all ingredients together in a large bowl. Make sure there are no dry clumps.
  2. Melt some butter in a large sauce pan. Once heated, drop batter into the pan in 3 tablespoon portions, as many that will fit without running into each other. Cook until bubbles appear on the surface and the edges being to look dry, and the bottoms are golden-brown, about 3 minutes. Flip the pancakes and cook until the other side is golden-brown, 2-3 minutes.
  3. Transfer the pancakes to a plate and repeat butter and cooking until all batter is gone.
