Pumpkin Zucchini Waffles

INGREDIENTS

  • 3 cups Kodiak Powder Cake Mix
  • 1 cup oats
  • 1 can pureed pumpkin
  • 3 cups milk
  • 3 eggs
  • 2 small grated zucchinis
  • 4 tablespoons avocado oil
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla

 

DIRECTIONS

  1. Mix all ingredients together till combine, do not over mix.
  2. Pour batter onto a headed and greased waffle iron and cook according to your waffle makers instructions. This batter can take a little longer than packaging.

 

NOTES

  • If the batter is too thick add water.
  • Freeze well, to reheat just pop them in oven to toast.
  • No need to add syrup, its in the mix.
