Chili

Ingredients

  • 1/2 chopped onion
  • 2 cloves minced garlic
  • 1 block crumbled tofu (crumble with potato masher)
  • 1 shredded zucchini
  • 1 shredded yellow squash
  • 4 tablespoons avocado oil
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons salt
  • 1 cup uncooked, rinsed lentils
  • 2 cups vegetable broth
  • 1 can rinsed black beans
  • 2 cups tomato sauce (1 can)
  • 1/2 cup nutritional yeast
  • Add ins: bell pepper, corn, kidney beans
Toppings
  • Avocado
  • Greek yogurt
  • Cheddar cheese

Directions

  1. Preheat oven to 375 degrees F
  2. Sauté onions and garlic in avocado oil until fragrant and onions become translucent.
  3. Add in tofu and seasonings and mix until it starts to turn brown.
  4. Add in everything else and stir well.
  5. Cook in the oven for 60-90 minutes.
  6. Let sit for at least 15 minutes before serving. Serve with avocado, greek yogurt, and sprinkling of cheddar cheese.
