Ingredients
- 1/2 chopped onion
- 2 cloves minced garlic
- 1 block crumbled tofu (crumble with potato masher)
- 1 shredded zucchini
- 1 shredded yellow squash
- 4 tablespoons avocado oil
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 2 teaspoons salt
- 1 cup uncooked, rinsed lentils
- 2 cups vegetable broth
- 1 can rinsed black beans
- 2 cups tomato sauce (1 can)
- 1/2 cup nutritional yeast
- Add ins: bell pepper, corn, kidney beans
Toppings
- Avocado
- Greek yogurt
- Cheddar cheese
Directions
- Preheat oven to 375 degrees F
- Sauté onions and garlic in avocado oil until fragrant and onions become translucent.
- Add in tofu and seasonings and mix until it starts to turn brown.
- Add in everything else and stir well.
- Cook in the oven for 60-90 minutes.
- Let sit for at least 15 minutes before serving. Serve with avocado, greek yogurt, and sprinkling of cheddar cheese.
