Blueberry Spinach Bars

Ingredients

  • 2 cups old-fashioned oats
  • 1 1/4 cups all-purpose flour
  • 1/2 cup maple syrup
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 3/4 cup butter, cold
  • 1 cup blueberries (can be frozen)
  • 1/2 cup spinach
  • 1/2 cup granola (optional)

Directions

  1. Preheat oven to 375F. Coat an 8×8 inch baking pan with coconut oil.
  2. In a kitchen aid mixing bowl, combine the oats, flour, maple syrup, cinnamon, baking powder, salt, vanilla, and mix well.
  3. Cut the butter into smaller pieces and add to mixer. Mix till blended. Note that some pieces of butter will still be visible, don’t over mix.
  4. Set aside about half of the oat mixture’ press the rest of it firmly into the pan. Bake until lightly browned at the edges (but not fully baked) for 13-15 minutes.
  5. Meanwhile, in a blender mix the blueberries with the spinach. Add water if needed for blending, especially if using frozen berries.
  6. Spread the blueberry mixture over the partially bake oat layer, then sprinkle with the reserved oat mixture. If adding granola, sprinkle granola on top. Bake until the topping is slightly browned, 20-25 minutes. Set the pan on a rack to cool completely before cutting and enjoying!
